Hog Roast Godmanchester has had their first official ‘winter warmer’ menu. Hog Roast Godmanchester always sees a change in menu choices once the summer has ended. The fresh and cool salads are swapped for the warm and hearty vegetables. Judith had selected the vegetables for her meal to celebrate her 65th birthday. Since the temperature had dropped, she thought that her guests would appreciate the hot meal.
Hog Roast Godmanchester had arrived on site early last weekend so that everything could be prepared and cooked fresh for the 5:30pm serve time. The catering team had been blessed with a big, open area of the garden that they converted into their kitchen for the afternoon.
As the serve time started to creep up on the team, Chatney carrots, green beans and baby corn all fresh from the market that morning, were cooked on the stove. Once cooked, the vegetables were drained and then tossed in herbed butter and placed into the serving chafers. A winter-warmer favourite is cauliflower cheese. As the cauliflower was blanched, a homemade cheese sauce was made. The cauliflower then got smothered in the seriously cheese sauce and topped with more cheese before being baked in the oven. Judith was exceptionally pleased with just how delicious the cauliflower cheese was as it is her favourite! The new potatoes were boiled and then rubbed with garlic and rosemary before being roasted in the oven.
Judith had opted for the whole-pig to be slowly roasted on low heat creating juicy and tender pulled pork rather than moist carved meat that a traditional spit-roast would achieve. Judith had also liked the look of the sage and onion stuffing surrounding the pig which she found out was cooked in the pig’s juices which gave the stuffing its heavenly flavour. Before service, Judith came out with an apple to pop in the pig’s mouth after being advised that the apple just disintegrates if it’s put in the pig’s mouth during the cooking period. The Pig certainly did look the part for Judith and her guests who all indulged in the hearty meal.
